Glyceryl Stearate (E471)

Glyceryl Stearate is an emulsifier comprising of mono and diglycerides derived from coconut oil and palm oil triglycerides. The naturally occurring triglycerides, which have a glycerol backbone and three binding sites for fatty acids, is modified to remove one or two fatty acids making sites available for water molecules to bind as the emulsion is formed.

 

Sodium Stearoyl Lactylate (E481)

Sodium Stearoyl Lactylate is an emulsifier and is produced from lactic acid (commercially produced by bacterial fermentation on starch and molasses) and vegetable based stearic acid (produced from coconut oil and palm oil).
